Here’s a super-simple recipe for Tzatziki (or Raita – I haven’t really figured out the difference between the two!). It’s best made up a few hours in advance, and it makes a super-tasty dip or a light side dish for a curry.
You’ll need:
1 large tub of plain natural yoghurt, or greek yoghurt (500mls)
1 cucumber, peeled and finely chopped
1-2 cloves garlic, finely chopped/crushed
Salt
Mint (optional)
Steps:
1) Mix up your finely chopped cucumber, 1 clove of the crushed/chopped garlic with the yoghurt. Mix really well to combine, and add in some salt.
2) You can add in the second clove of garlic if the flavour isn’t strong enough, but be careful not to overpower it. The garlic flavour will get stronger after a while, so best to leave it for an hour before adding in more garlic.
3) This dish is best made up in advance and left in the fridge to chill for a few hours to allow the flavours to infuse into the yoghurt. You can experiment and add mint to make it even fresher. Add salt to taste.
